This extreme geological structure forces the Pinot Noir roots to dig deep, imparting profound mineral tension and a silky texture to the wine. The domaine practices strict manual harvesting and double sorting. Fermentation is gentle, followed by 16 to 18 months of maturation in French oak barrels.
