Even their wine labels are works of art—handmade at an ancient paper mill in Auvergne using cotton, linen, and real pressed flower petals. This Pinot Noir, affectionately named "Sur La Plage" (On the Beach), hails from the Bourgogne Hautes-Côtes de Beaune. The grapes are sourced from three distinct micro-parcels characterized by their unique sandy soils, which directly inspired the cuvée's name. The estate strictly practices biodynamic viticulture. After manual harvesting, the grapes undergo a brief whole-bunch infusion in concrete tanks for about a week. Fermentation is driven solely by indigenous yeasts, and pressing is done entirely by hand using a traditional, antique vertical basket press. The wine is then slowly aged (élevage) in old neutral Burgundy oak barrels. The entire process is strictly zero-intervention and zero-added sulfites (sans soufre ajouté), bottled unfined and unfiltered, preserving the most naked, authentic purity of Pinot Noir.
