In terms of vinification, Lafon insists on minimal intervention. Whole clusters are pressed, and after a brief settling in stainless steel tanks, the juice goes directly into oak barrels for alcoholic and malolactic fermentation. This Village cuvée typically sees a very low percentage of new oak (often zero), aging in older barrels for about 18 months. The estate favors extended lees contact (Sur lie) with very little batonnage (stirring) to maintain a reductive style and tension, avoiding premature oxidation or excessive heaviness.
