For the 2003 vintage, grapes were 100% handpicked and entirely destemmed to avoid extracting harsh, unripe stem tannins during a dangerously hot year. Fermentation took place in temperature-controlled open oak vats for about 20 days, with pigeage (punching down) performed twice daily to extract color and flavor. The wine was subsequently aged entirely in French oak barrels for an extensive 21 months.
