Les Combettes is an exceptionally situated Premier Cru in the village of Puligny-Montrachet, directly bordering the famous Charmes Premier Cru in Meursault. The soil here is composed of clay and limestone, covered with a significant amount of stony scree. This unique transitional terroir allows the Chardonnay from Les Combettes to seamlessly marry the generous breadth and roundness typical of Meursault with the vivid chalky minerality and refined acidity that are the hallmarks of Puligny-Montrachet. In the cellar, Domaine Jacques Prieur insists on 100% manual harvesting followed by rigorous sorting. The grapes are whole-bunch pressed, and alcoholic fermentation takes place entirely in French oak barrels using indigenous yeasts, followed by 100% malolactic fermentation. The wine is then aged for 15 to 18 months in oak, with judicious bâtonnage (lees stirring) applied depending on the vintage, building profound complexity and a silky, creamy mouthfeel.
