Description
🏰 【 Winery Legend: Domaine Jean-Marc et Hugues Pavelot 】

Located in the Savigny-lès-Beaune village of the Côte de Beaune in Burgundy, Domaine Jean-Marc et Hugues Pavelot is universally acknowledged as the benchmark and pinnacle estate of the appellation. The Pavelot family has cultivated vines here for generations, and the domaine is currently co-managed by Jean-Marc and his son Hugues. Through their profound understanding of the local terroir, the father-son duo maximizes the potential of Savigny. The La Dominode Premier Cru is undoubtedly the flagship and soul of the estate. This vineyard boasts incredibly old Pinot Noir vines, some planted as far back as the 1930s. Having witnessed nearly a century of history, these ancient vines endow the domaine's red wines with unparalleled depth, power, and astonishing aging potential.

🌿 【 Terroir Soul and Winemaking Craft 】

La Dominode is situated on the prime slopes of Savigny-lès-Beaune, featuring an east/northeast exposure, and stands as one of the village's most revered Premier Crus. The terroir consists of a hard limestone base covered by iron-rich clay and sandy topsoils. This geological profile, combined with the deep roots of the nearly 90-year-old vines, produces a muscular and distinctly masculine expression of Pinot Noir. In viticulture, the estate practices Lutte Raisonnée (reasoned agriculture) and strictly limits yields. For Élevage (winemaking), the hand-harvested grapes are mostly destemmed and undergo a cold maceration to extract deep color and pure fruit aromas. The wine is then aged in French oak barrels for 10 to 12 months, with the proportion of new oak typically kept around 30% to soften the robust tannins without masking the raw tension of the old vines and terroir.

📅 【 Vintage Analysis and Authority Scores 】

The 2018 vintage in Burgundy was a warm, sun-drenched, and excellent year. A damp spring was followed by an exceptionally dry and hot summer, leading to early ripening. Pinot Noir red wines from this vintage are celebrated for their full bodies, high fruit concentration, and ripe tannins. For the La Dominode Premier Cru, which is already known for its robust structure, the warm climate of 2018 bestowed it with more abundant dark berry aromas and a fleshy, generous mid-palate. Crucially, the deep roots of the old vines perfectly maintained the necessary acidity and mineral tension, resulting in a monumental wine with tremendous aging capabilities.

🏅 Score: Wine Advocate 93 / "The 2018 Savigny-lès-Beaune 1er Cru La Dominode is superb, unwinding in the glass with aromas of dark berries, plums, rich soil tones and warm spices. On the palate, it's medium to full-bodied, rich and muscular, with powdery tannins and a long, concentrated finish."

🍷 【 Tasting Experience 】

👃 Aroma: Upon opening, it reveals deep and concentrated aromas of black cherry, black plum, and blackberry, gradually unfolding the signature earthy notes of Savigny, along with licorice, roasted meat, and subtle hints of spice and cedar.
👅 Palate: Full-bodied, solid, and muscular. The warmth of the 2018 vintage delivers a wave of sweet, copious fruit. The tannins are abundant, tight, and possess a powdery texture. A vibrant acidity supports the massive backbone, creating a structure that is grand yet refined.
✨ Finish: The finish is powerful and persistent, with dark fruit, earth, and mineral tones echoing endlessly on the palate, showcasing the profound depth of the ancient vines.

🍽️ 【 Tasting Guide 】

🌡️ Temperature: Best served between 16°C and 18°C.
⌛ Decanting: Given the intense concentration and robust tannins of the 2018 vintage, it is highly recommended to decant for 45 to 60 minutes, or let it breathe in the bottle for 1.5 hours, allowing its massive body to stretch and open up.
⏳ Drinkability: Currently entering the early stages of its drinking window with exuberant fruit, but possesses the staggering potential to age effortlessly for 15 to 20+ years.
🍴 Food Pairing: An exceptional match for rich, flavorful meat dishes such as roasted rack of lamb, Bœuf Bourguignon, pan-seared ribeye steak, or aged cheeses.

💬 【 Manager's Pick 】

⚡ When it comes to Savigny-lès-Beaune, Pavelot is the absolute benchmark! This La Dominode 1er Cru is crafted from nearly 90-year-old Pinot Noir vines, giving it an incredibly solid structure. 2018 was a warm year, so the fruit concentration is explosive, and the dark cherry and earthy notes are phenomenal. On the palate, it is full of power with muscular, meaty tannins. It's fantastic right now with a great steak, but it also has the backbone to evolve beautifully for another decade or more. If you want a Burgundy red with Grand Cru structure at a fraction of the price, the value here is unbeatable! ⚡
