Viticulture: Fully farmed using certified biodynamic practices since the acquisition in 2004. Harvest is done entirely by hand to ensure only impeccable fruit is selected.
Élevage: Pressing is conducted gently in Verzé. Following decantation, the must is transported daily to Puligny-Montrachet, where fermentation and aging take place under the watchful eye of the technical team. The wine undergoes spontaneous fermentation and spends 12 months in a combination of concrete egg-shaped tanks and oak barrels, followed by 4 to 6 months in stainless steel tanks before bottling.
