Terroir: As the root word "Caille" (stones) suggests, this site is characterized by extremely shallow topsoil with a high concentration of white pebbles and limestone. This austere geology forces the vines to root deeply, imparting an unmistakable mineral precision and a crystalline acid backbone to the wine.
Viticulture: The estate practices "Lutte Raisonnée" (reasoned struggle), ensuring ecological balance in the vineyards and strictly controlling yields to produce fruit of high concentration.
Élevage: Following a gentle pressing, the juice ferments with indigenous yeasts. Élevage takes place in larger French oak barrels (often 350L) with only about 20% new oak. The wine is aged on its fine lees (sur lie) for 15 to 18 months with minimal bâtonnage, preserving the wine's intrinsic tension and signature struck-match reductive aromatics.
