Following the legacy of Louis Carillon, a highly respected name in white Burgundy, the family estate was divided in 2010 between his sons, François and Jacques. François Carillon, who has been working in the vineyards since 1988, brings decades of hands-on experience to his namesake domaine. His philosophy favors purity, elegance, and vitality, aiming to express the pristine terroir of Puligny through meticulous, environmentally respectful viticulture and minimal cellar intervention for his Chardonnay.
🌿 【 Terroir & Winemaking 】
This village-level wine is a masterclass in blending, sourced from 8 distinct Lieux-dits covering 4 hectares: Derrière la Velle, Reuchaux, Corvée, Levrons, Aubues, Tremblots, Les Noyer Bret, and Les Rousselles.
Terroir: Classic clay and limestone soils.
Viticulture: High-density planting (up to 10,000 vines per hectare) forces the vines to root deeply and naturally restricts yields to enhance flavor concentration. The estate employs sustainable practices with no chemical herbicides, utilizing horse-plowing and natural compost made from vine shoots.
Élevage: Hand-harvested grapes undergo gentle pressing and natural settling. The wine is aged traditionally for about 12 months in French oak barrels (only 10% new oak) with occasional bâtonnage to build texture and weight. It then spends 6 months in stainless steel vats before bottling to preserve its tension and aromatic purity.
