The estate strictly adheres to natural winemaking philosophies, utilizing manual harvests and indigenous yeasts. The most defining feature of "Besame Mucho" is its élevage: the base wine undergoes micro-oxidative aging in old Sherry casks before its secondary fermentation in the bottle. It is bottled with zero dosage (Brut Nature) and zero or minimal added sulfites, completely unfiltered. This perfectly preserves the raw chalky tension of the terroir alongside the nutty complexity imparted by the Sherry casks.
