This exceptionally rare white wine originates from the "Clos Gauthey" Premier Cru in the village of Monthelie. The site is characterized by limestone and clay-rich soils with excellent sun exposure, granting the Chardonnay grapes alluring fruit aromas and a solid mineral backbone. Pacalet's vinification is rigorously natural: 100% manual harvesting followed by whole-bunch pressing. Fermentation is triggered solely by indigenous yeasts without any addition of sulfur dioxide (SO2). The wine undergoes a prolonged élevage on its fine lees in used French oak barrels without bâtonnage (lees stirring). This preserves the raw purity and vibrant tension of the wine. It is bottled unfined and unfiltered, with only a microscopic dose of sulfur to ensure stability.
