Philippe Pacalet is revered as a pioneer and master of natural wine in Burgundy. As the nephew of Marcel Lapierre, the legendary figure of natural winemaking in Beaujolais, and having served as the winemaker for the prestigious Domaine Prieuré Roch (co-owner of DRC) for a decade, Pacalet's pedigree is unquestionable. Establishing his own label in 2001, he operates as a micro-négociant but acts with the dedication of a vigneron, meticulously selecting and renting prime parcels while overseeing all vineyard work. He firmly believes that wine should be a pure translation of terroir, employing strict minimal intervention to express the true, unadulterated soul of Burgundy.

This village-level Chardonnay is sourced from carefully selected parcels within Puligny-Montrachet.
Terroir: Rooted in classic clay and limestone soils, which impart intense mineral tension to the wine.
Viticulture: Farmed following organic and biodynamic principles to preserve vineyard biodiversity, with strict yield restrictions to ensure fruit concentration and depth of flavor.
Élevage: Fermentation occurs naturally with wild yeasts and no temperature control. The wine is aged in old French oak pieces on its fine lees (sur lie) for 11 to 14 months without racking. Absolutely no sulfur is added during vinification, with only a minuscule amount used at bottling. The wine is bottled unfined and unfiltered to seal in the pure energy of the terroir.
